Rather than getting the top shell of an egg to land on the bottom, try getting the top shell to land on a pile of enemies, which are resting on an egg. The top shell will break down all the enemies in between it and the bottom shell. Now only will you get a Yoshi, but you will have destroyed a bunch of enemies in the process, therefore giving you more points.
